Sunday Eats at PeteZaaz!

One of the other blogs I follow from time to time is called Nona Brooklyn.  The other day, I checked out Nona and read a great post about this new pizza joint in the Crown Heights neighborhood of Brooklyn called PeteZaaz.  Chef/Owner Peter Nentner comes from No. 7 – a delicious restaurant in my neighborhood of Fort Greene and the other Chef/Owner and “Dough Man”, Glen Hudson comes from Pulino’s – a popular Keith McNally pizza spot on the Lower East Side.

PeteZaaz was written about for their inventive and playful approach to pizza.  The featured pizza that totally grabbed my attention was the Chili Con Carne pie… described in Nona Brooklyn here:

It’s got an ancho-based sauce. We use dehydrated ancho chilis and we rehydrate them with Sprite. We add garlic, onions, some lime zest, and we puree all that to make a nice little chili sauce. We braise some pork shoulder in the sauce, then we incorporate the rest of the sauce with a tomato sauce for the base for the pizza. We top it with the chopped braised pork shoulder, and I make a cream cheese burrata to top it as well.

We make our own fresh mozzarella in-house, at least twice a day. To make the burrata, I stretch some of the mozz and heat up some cream cheese, then stuff the warm cream cheese into a balloon of stretched mozzarella, and seal it up like a burrata. It’s like a mozzarella and cream cheese water balloon. After cooking it on the pizza, the cream cheese just oozes out.

When we pull the pizza out, we sprinkle it with cold pickled corn kernels, to give you a little acidic burst. Have you ever had Gushers candy? When you bite into a Gusher the juice comes shooting out, and I like that effect. With the cold pickled corn kernels, when you take a bite of the slice you get this burst of acidic flavor.

For crunch on that one we do a Cheez-It gremolata. I love Cheez-Its. I’ve been eating them forever. I mix crumbled Cheez-Its with lime zest, garlic, cilantro, parsley and Thai basil, and sprinkle that over the top for a little crunch.

I like to have an acidic component, a crunchy component and a sweet component as a base for all the pizzas. That’s the rule of thumb when we’re coming up with a pie.

Chilis rehydrated with Sprite?  braised pork shoulder, a house-made mozzarella and cream cheese water balloon that oozes over the pie?  I was so there.  I immediately contacted some friends (Kelly & Val, who live around the block) and Amie and Rob and we made a date for this past Sunday.
Upon walking into PeteZaaz, we realized it wasn’t the best atmosphere for seating a table of six.  It’s a long narrow entrance, where you can watch them making pies and grinding their own house-made sausage, which is cool, but the back seating area is pretty tight.  We decided to order a bunch of pizzas (thankfully, we were six people, so we could order a lot and try most things on the menu!) and bring them home to Kelly & Val’s apartment.

Meanwhile, I was a little heartbroken when I found out that the chili-con-carne pie was just a special and was not available.  BUMMER!  But we managed to do alright with the other menu choices.

So here’s the breakdown of our order:
One Baked Potato Pie (please forgive… the photo does not do this pie justice):
Baked Potato Pie – purple potatoes, applewood smoked bacon lardons, white cheddar and green onion covered with heavenly creme fraiche.
This pizza seriously rocked our worlds.  It was definitely the favorite of all of us.  It was basically like the best potato skin you’ve ever had (with the most amazing ingredients) served on top of this fresh, slightly crispy, slightly chewy amazing dough.  It was to die for.  I’m still craving more.
One Pie – Half Brooklyn (Tomato, House-Made Mozzarella and Marjoram), Half topped with House-Made Sweet Sausage 
The house-made sausage on this baby was pretty amazing.  That was my second-favorite item we ordered (after that life-changing baked potato pizza).  Side note… I never ate sausage growing up.  Like never.  I thought it was gross.  Since moving to New York, I have found a total love for sausage.  It is now one of my favorite pizza toppings.  And this sausage was outstanding.
One Pie – Half Pepperoni, Half Cold-Fried Chicken

I enjoyed the pepperoni pizza – they sliced up their pepperoni in thin strands and scattered them pretty uniformly throughout, which I liked… you got a little bit of pep in each bite!  The cold-fried chicken pie was not my thing.  The collards were hard to bite through and I just wasn’t crazy about the overall flavor in this pizza.  But the rest were winners!
Valerie ordered a Kimchi Roll – House-made Mozzarella, Kimchi Bruschetta, Thai Basil Pesto and Fried Shallots
I’m not a huge kimchi fan, but I had a bite and thought this sandwich was pretty good.  The fresh mozzarella was milky and delicious and the fried shallots were super tasty.
And Rob (our poor lactose-intolerant friend) ordered The Reuben Stromboli – Minus the Mozz - Pastrami, Sauerkraut, Chinese Mustard
I also took a bite of this one (it’s for the blog… I need to sample EVERYTHING!!).  The pastrami was super yummy – of course, I would have liked it better with the cheese – I mean, look who you’re dealing with here.  But another yummy dish – full of flavor for sure!
So – that was our PeteZaaz experience.  I would definitely hit this place up again.  Kelly and Val are lucky to live so close.  And they deliver!!  Next time I would have to get the Baked Potato pie again – only because it’s just divinely delicious.  But I’m hoping they get rid of the Cold-Fried Chicken pie and add the Chili-Con-Carne pie instead as a regular menu item… there has been some rumor of that according to Nona Brooklyn.  Fingers crossed… I have to try that chili pie!!

Holy Chicken Wings of Awesomeness

Some of you might remember my culinary ravings from our trip to Portland, OR back in April.  Two meals stuck out most for me from that trip – one of them being the four-course brunch menu served at Beast (one of the best meals of my life) and the other being the Spicy Vietnamese Fish Sauce Wings from a place called Pok Pok that were just off the hook crazy delicious.  (For extensive photos and writings of these meals, check my blog post from the trip).  Meanwhile, it has come to my attention that Pok Pok is officially opening two locations right here baby…  a restaurant in Brooklyn on Columbia Street (a newly burgeoning foodie scene) and a smaller wings spot on the Lower East side come early 2012.  The deal was official as of the end of October and my mouth is watering just thinking about those fish sauce wings.  Who wants to join me opening week?!

Meanwhile, speaking of culinary amazingness… is anyone else watching The Next Iron Chef on Food Network?  Because it is currently my favorite show (keep in mind, we still don’t have cable and our TV has been rather limited – but still…) and this season, pitting culinary superstars against each other for the Iron Chef title, has been totally awesome!  I believe the finale is airing TONIGHT!  Now I want to go visit the restaurants of all these chefs… especially Chef Chiarello’s restaurant Bottega in Napa Valley.  Maybe I’ll add that to my list of things I want to do as a thirty-three year old.  Baby’s first trip?  Anyone know a good sitter in Napa?  Hmmmm.

It’s 92 degrees outside today.  Wow.  No wonder I don’t feel like moving.  Oh yeah… I also did a killer yoga class yesterday and my entire body is hurting… but that’s a good thing.  Yoga makes me feel strong.

Anyway, I’m going to go brave the ridiculous heat and take a trip to Fort Greene and wander around the neighborhood with my camera for a bit before meeting some friends for dinner.  We’re going to eat at Habana Outpost – owned by the same people who own Cafe Habana in Soho (this is where I first tasted and fell madly in love with CHILAQUILES).  I’m quite excited to start sampling the Fort Greene restaurant scene.

Oh, and I’m doing a little research for a potential project so maybe you all can help me out.  Out of curiosity, what’s a subject you’d like to learn about or a craft you’d like to try out?  Like anything whatsoever – however random the topic?  Here are a few of my ideas:

  • Flower arranging
  • Improving my memory
  • Recipes for satisfying vegetarian meals
  • Perfume making and what scents work with my body chemistry

This mural is painted on the brick wall of Nice Guy Eddie’s in the East Village.  I took this last night on my walk to the subway at 2nd Avenue – I was headed to Brooklyn to have dinner with Jess at the wonderfully delicious Lunetta on Smith Street.  I like how the light coming from the upper left is highlighting the outline of the bricks, making it a more interesting photo than if I took it head-on.  I also love the “I Love” scribbled in the bottom right corner.  I actually didn’t notice that until I loaded the photos this morning.

Anyway, last night turned into a doozy!  Our dinner at Lunetta was awesome.  We started with two pieces of bruschetta – one with white beans and sage and one with Lunetta-made ricotta, honey and lemon.  They were both RIDIC!  The bread was crusty and soft with a yummy buttery/olive oily/sea salt taste under the toppings.  OMG. I could live on that ricotta with lemon and honey!!!  My heaven.

Then we split an order of the meatballs – Berkshire pork and grass-fed beef with walnuts and a toasted garlic red sauce.  I could have eaten the remaining sauce like soup when the meatballs were gone.  Really excellent and warm and comforting.  We also split an order of the pappardelle with braised spring lamb and rosemary – which had a really deep wonderful flavor – with the pasta cooked perfectly!  Have I mentioned how much I love pasta?  I could live on Italian food I think.  I just always crave it.

To accompany this yummy dinner, we split a bottle of Nebbiolo – an Italian red wine from the Lombardy region.   And we both got a little tipsy.  Before leaving, I decided to text my buddy Jon – (of Jones Street Station) – and he suggested we meet for another drink at Jake Walk.  I’d been wanting an excuse to go to Jake Walk again – so off we went.  It’s hilarious – Jon is like the mayor of Carroll Gardens and everyone at Jake Walk knows and loves him – which made sitting at the bar wonderfully fun. We had an assortment of drinks and some awesome roasted peppers of some sort with lemon, olive oil and sea salt – (typical spanish tapas I was told).

Then I ordered up one piece of Fourme D’Ambert – a wonderful cow’s milk blue cheese from France, which we paired with a glass of Pedro Ximenez – a sweet, dark, syrupy dessert sherry from Spain.   Holy yum.  That is such a good pairing.  The two flavors and textures (creamy spicy salty cheese w/sweet, rich syrupy sherry) pairs amazingly and creates a whole new luscious experience in your mouth.  Really – you should try it.  I gave a taste to the bartender (who was the sweetest girl ever) and she was blown away.  She’s totally recommending that pairing to customers from now on… especially customers on a date.  It is a super sexy taste sensation!

So at around 2am, I headed home on the train back to Manhattan.  The subway sucks.  The F train was running as an A train and I ended up having to get off at a different stop and take a taxi home.  Oh well.  But what an awesome random Wednesday night!  Good food, good drinks, good company… what’s better than that?

Photo 28 out of 365 – “Blushing Beauty” & Food Orgasm

This photo was taken yesterday inside Boulettes Larder – an amazing, unique culinary haven inside the Ferry building in San Francisco.  This also happens to be my dear friend Dana’s place of work.  Dana – if you are reading, thank you for filling Adam and me with the most delectable food San Francisco has to offer.

Here is a picture of Dana and me after Thursday night’s dinner at the delicious Pizzeria Delfina, where Dana’s fiance Brandon is the sous chef.  It’s lovely having friends in high foodie places.

So… I must tell you about our entire day of eating and drinking yesterday (Friday) – our only full day in San Francisco.  It was a foodie day for the record books!

We started off for breakfast at Mama’s on Washington Square in North Beach at around 10am.  We met Adam’s brother Dave and his family – Noemi, Tomas & Michelle.  There was a line when we arrived, which gave us ample time to drool and obsess over the menu before we placed our orders at the counter.  Then, we were seated at a lovely round table in the back of the restaurant – a charming, cozy, homey little spot.

To start, we ordered a fresh-baked lemon blueberry muffin, which was light & fluffy, dusted with powdered sugar and bursting with juicy blueberries.  Dave also ordered a piece of their fresh-baked banana bread, which was moist and delicious.  For the main event, I ordered the SOB (south of the border) omelette – with black beans, salsa, sour cream and pepper jack cheese.  Adam ordered the french toast sampler – three different types of french toast… a banana bread piece, a Swedish cinnamon piece and a chocolate cinnamon piece.  Michelle (Adam’s niece) ordered the buttermilk battered pancakes with seasonal berries.  I thought they were the most beautiful pancakes I’d ever seen and I had to take a photo!

Every dish was served with a soft sourdough baguette and homemade Ollalieberry jam.  I had never heard of Ollalieberries before – but man… they make some scrumptious jam.

By the time breakfast was done, it was around 11:30.  Adam and I walked over to my longtime family friend Ben’s office in the North Beach neighborhood to pay him a visit.  We killed a little time and worked up our appetites for lunch – I know, who really needs lunch after finishing a crazy breakfast like that at 11:30 – but I HAD to try Boulettes Larder for lunch.  I have been hearing about it for four years from Dana who has seriously awesome taste in food.  She is just bursting with pride working for this restaurant/food market and now that I’ve eaten there, I so completely understand why.

Boulettes Larder was one of the most special dining experiences I’ve ever had.  First, it is such visually appealing place.  It is located in the Ferry Building (pretty much like the Chelsea Market of NYC) in San Francisco – right on the bay, with sailboats floating by and a view of the Bay bridge.  You walk in and the entire kitchen is open – with the predominantly female staff working their magic for everyone to see.  The kitchen is bright, immaculate, warm and homey – with copper pots and pans and other beautiful cookware hanging on the walls and filling the shelves.

There is one communal table inside the restaurant along with a market filled with exotic salts, spices, oils and other hard-to-find ingredients, most of which are used in their menu.  Speaking of their menu – it changes daily, featuring fresh, seasonal, conscientiously produced farmstead ingredients and representing cuisines from cultures around the world.  Dana told me that Chef and Owner, Amaryll Schwertner, NEVER repeats a menu item (except for a select few dishes that remain on the menu as staples).  She is an artist, with an obvious passion for creating and this passion shines through with every dish that is presented.

Adam, Ben and I were lucky to get a table outside overlooking the bay and the Bay Bridge.  We started with a basket of fresh breads from Acme Bakery and sweet butter.   For our beverage, we enjoyed a delightfully refreshing and sophisticated sparkling Elderflower soda from Belvoir Fruit Farms in the UK.

For our lunch, we ordered three different dishes so we could share tastes all around!  I had the Turkish pasta with cumin scented lamb, which was cooked with spinach, fava, parsley, yogurt and mint.  The pasta was trofie, which is from the Ligurian region of Italy and one of my favorites… it has a really nice consistency – a little chew to it.   This dish reminded me of the scene in Ratatouille where the mean critic tastes the ratatouille and gets transported back to his childhood.  This dish didn’t really transport me to my childhood – because I wasn’t eating things like this when I was a child… but from the first bite, I was just blown away by the care and love that was so apparent in the dish.  It felt like a home cooked meal that had been slowly cooking for hours and hours – there was so much depth of flavor and richness, but it was still bright and lively tasting with the yogurt and the mint!  It was amazing and I ate it until my stomach hurt from fullness.

Adam (bless his pork-loving heart) ordered the pulled pork sandwich in a soft torpedo roll with green string farm potato salad and wild arugula.  He declared this meal the best dining experience he’s ever had.  The pork was super moist and bursting with spices and flavor – and the best part, was that it was tucked into this little boat of a torpedo roll, that was so soft, the whole thing just sort of melted in your mouth when you took a bite.  It was sinful.

And finally, Ben ordered the spicy fried rice scramble with wild king salmon and Alaskan halibut.  I only had one bite of this dish – but it was a wonderful bite – with a lot of spice and a very light curry taste to it if I remember correctly.

All three dishes were gorgeous – as you can see, which also added to the delight of this meal.  Everything was plated so thoughtfully and artfully, I made everyone wait to dig in so that I could capture the beauty of every single dish!!

Now, although I was nauseously full at this point, I could only dream of how good their desserts must be considering the quality of everything we just ate, so we ordered one piece of their famous lemon meringue pie and one plate of assorted cookies (including a chocolate brownie cookie with sea salt, which was to die for).  Apparently, Martha Stewart herself flipped out over this lemon meringue pie and wanted the recipe.  I took one bite of it and nearly fell off my chair.  This is BY FAR the BEST BEST BEST dessert I have ever tasted in my life!  The crust was buttery and perfect – the meringue was so light and airy – almost like whipped cream – and the lemon filling was divine – creamy, sweet, tangy and salty all at once.  It was beyond the beyond – and I am not even really a dessert person.  I  asked our server if I could ship one home to my mother for mother’s day (lemon meringue is her favorite pie), but unfortunately, they don’t do that.  I made a vow that I will return one day with my mother because she must taste that pie.  It is the lemon meringue that beats all others.

Food experiences like this inspire me so thoroughly.  I want to continue to take photos of food and write about food and seek out more places like Boulettes larder where passionate people share their tasty creations and discoveries with eager guests.  I was privileged and honored to be introduced to both owners of Boulettes when I was there and I cannot express enough how much I admire what they have created.  It is a magical place and I hope to return many many more times in the future.

I took this picture on the subway yesterday on my way to Murray’s.   This guy was standing next to me and my camera was all packed up in my bag, but I saw his camera and just had to snag a photo.  I was going to ask his permission first, but he was listening to his ipod and was totally oblivious to me checking him out… so I just went ahead.  I only  had time for one shot before he got off the subway, but I got exactly what I wanted!   I looked up the model – Canon FTb and it was manufactured in 1971!   Cool.

On another note, Adam and I had a scrumptious brunch this morning with our friends Dave & Lucy at  Northern Spy Food Co. on 12th between A & B.  I had heard good things and boy… we were NOT disappointed!  I ordered the slow-whisked scrambled eggs with house-made sausage and grilled potato & rosemary bread.  Adam ordered the Corn Beef Hash with Heritage beef brisket and poached eggs.  Both dishes were amazing – the sausage was TO DIE FOR – like a big juicy sausage meatball – super flavorful!!  We also split a kale (shredded) salad with clothbound cheddar, sweet potato (though I think they served it to us with turnips today instead) and almonds.  This was also delicious – the first time I’ve ever really swooned over kale!  It is an adorable and cozy little place and I am definitely excited to go back for dinner (or brunch again).

And finally – here is photo I took of a cheese called Capricious.  It is an aged goat cheese from Achadinha Goat Cheese Company in Sonoma County and apparently, it is pretty hard to come by.   It is a crazy looking cheese!   I tried it at Murray’s yesterday and I liked it – it reminded me of a goat cheese version of a parmagiano.

Adam and I are taking off tomorrow morning for Sonoma (perhaps a visit to above cheese maker is in order), so my photos for the next week will have a little west coast flave!  Of course, I’m hauling my laptop & camera with me… in fact, this is my first trip with my laptop in tow.  We’re growing very attached.

Golden Early Evening Light…

This photo was taken from my rooftop this evening.  I love the light at this time of day.  It casts that golden hue and makes everything look so vivid.

Oh – and Buttermilk Channel was RIDICULOUS this morning.  Adam and I split two dishes of course (that’s the way we roll) – one savory and one sweet.  He got the pecan pie french toast with fresh whipped cream from heaven and I got a delectably gluttonous cheeseburger with a fried egg on top & cheddar cheese (the fried egg was a recommendation from my friend Jonny).   We also got a side of the handmade sausage and a side of the cheddar waffles, which were both to die for.  And to wash that down… a bellini for me and bloody mary’s for the boys.   That was my fourth time at Buttermilk Channel now and I am truly a fan.  I can’t wait to go back.  And seriously… Brooklyn is starting to really woo us these days.  I’m thinking one more year in the East Village and then it’s over the bridge for us come summer 2011!
