This is one of the hors d’oeuvres we made for Faye’s shower. It was a recipe that my friend Steph found – Apricot halves filled with a blue brie/cream cheese mixture, topped with a fresh basil leaf and a couple toasted pine nuts. It was tasty – and very beautiful I thought. I would totally make them again – but I’d get a better cheese to start – maybe Gorgonzola Dolce – sweet & mild – and skip the cream cheese. Yum.
Yummy! Fresh apricots or dried?
Fresh!! though I was wondering if something like this would taste good baked too? when the weather gets cooler? but these were just fresh.
Neil! Tried the clothbound cheddar – DELISH! Thanks for the excellent recco.
YUM! so glad you liked!!
Wow- my apricots made your blog! I am so proud that you liked it enough to post Nell! But you’re TOTALLY right- a different (and better tasting) cheese would have made a big difference! They still looked good though! 🙂 It was great to see you Nelly and I can wait to party at MGM! See you soon!
